We cut the pork loin into slices along the grain. Soak in water for five minutes to allow it to fully absorb the water.

We add a little salt and water starch to spread it evenly.

We first remove the roots of the enoki mushrooms, break them up with our hands and wash them for later use.

Wash and peel tomatoes and cut into pieces. This is based on personal preference. I prefer eating tomatoes with the skin on.

Put water into the pot and add the enoki mushrooms first. When the water opens, add the tomatoes.

Boil the water again and add the meat slices. Stir gently with chopsticks to prevent the meat slices from sticking.

Add salt and chicken essence. Pour in sesame oil to taste.

Make a sauce plate according to your own taste. Eat with dip. Remember to sprinkle with chopped green onion.
