Break the cauliflower into small florets, wash and blanch and set aside

Cut the eggplant into thick strips, chop the onion and ginger, and prepare the tomato sauce

Heat the pan with cold oil, add a little more oil, add onion and ginger and sauté until fragrant

Stir-fry continuously, stir-fry for a while, until the eggplant strips become soft. Feel free to fry, no need to add water, the pan will not burn
