Waterless garlic black pepper chicken
Overview
I saw someone use a similar method to make waterless scallion oil chicken before. Because I didn’t like the smell of onions, I switched to garlic. I didn’t expect that the garlic soaked in the aroma of chicken in the sauce would be glutinous, and the chicken would also have a strong flavor. The two complemented each other. Love this bite.

Wash the chicken wing roots and set aside.

Add dark soy sauce, light soy sauce, salt and cooking wine and marinate for half an hour.

Wash and chop turmeric and garlic.

Spread a layer of turmeric on the bottom of the pot

Spread another layer of garlic

Place marinated chicken wings on top. Pour all the marinated sauce into the pot as well.

Add cooking oil

Sprinkle with black pepper and sugar

Cook over medium heat until steamed

Change to low heat. Simmer for 20 minutes

Turn off the heat and simmer for ten minutes. Use chopsticks to test, the chicken will be cooked if you can poke it open.
