Waterless braised pork

Put the pork belly in cold water, add ginger slices and blanch.

Blanch the foam and impurities.

Remove the meat pieces and wash them.

Do not add oil to the wok, just add the meat pieces and stir-fry.

Fry until the meat is slightly brown and oily. Add rock sugar.

Fry rock sugar until melted and brown, then add dark soy sauce.

Add rice wine.

The amount of rice wine is just enough to be even with the meat.

Add garlic, green onions, star anise and salt.

Bring to a boil over high heat and simmer for 1 hour.
