First prepare the ingredients, eggplant, green peppers, onions, and garlic. First wash the eggplant and cut it into large strips, sprinkle with salt and marinate for an hour. After marinating, squeeze out the water from the eggplant and set aside.

Add cooking oil to the pot and heat it. After the oil is heated, add the pickled eggplant and fry until slightly brown and then take it out. Leave some oil in the pot, add garlic and peppercorns, and stir-fry until fragrant. Add the fried eggplant and stir-fry. Add light soy sauce, oil, dark soy sauce, vinegar, sugar, and rice wine.

Stir-fry for 1 minute, add green peppers and onions, continue to stir-fry for 2 minutes, add a little water, cover the pot and simmer for 5 minutes. During the simmering process, stir-fry a few times to avoid burning the pan. After simmering, drizzle some sesame oil on top, and then take it out of the pan and serve it on a plate.
