Wash the green pepper and break into small pieces

Peel, wash and slice potatoes

Heat oil in a pan, sauté onions and ginger until fragrant

Add potato slices

Stir-fry for two or three minutes, add a little light soy sauce, mainly for color adjustment

Continue to stir-fry for another two to three minutes

Add the green pepper pieces and stir-fry constantly

Sauté until the green peppers are green and the potatoes are soft, add salt to taste

Continue to stir-fry until the edges of the potato slices are slightly browned, and when they begin to crackle, turn off the heat and remove from the pan (the color of the finished product will be a darker golden yellow due to lighting issues when taking photos with your mobile phone)
