  1. Wash and cut the eggplants into slices, soak them in water, and add salt to the water to prevent the eggplants from discoloring.

  2. Add green pepper and minced garlic to the oil pan and saute until fragrant.

  3. Add the eggplant and stir-fry, be sure not to add water, because the eggplant itself has more water.

  4. After frying, add salt to taste and serve.
