Clean one piece of fresh squid. I have three pieces and only used one of them.

Cut the squid from the middle of the belly, clean the internal organs, leave the squid head, and then cut the body with a flower knife.

Slice cucumbers, bell peppers, and carrots and set aside.

Put the cut squid into a pot of boiling water and pour it into the water. Pay attention to rolling the squid into the water and picking it up. Don't make it taste stale after a long time.

Stir-fry the Sichuan peppercorns, chopped green onion, and stir-fry. Then add the squid, stir-fry with an appropriate amount of salt, and then add the chicken essence.
