Ingredients: 500g flour, 2 eggs, 7g salt, 250g water
-
Knead the dough into a smooth shape. Because an extra egg is added, the egg yolk will be visible when the dough is kneaded. This will make the dough stronger, and then let it rest for more than 10 minutes.
-
The next step is to knead the dough, knead it repeatedly until your wrists are soft, then knead it into long strips and cut it into equal dough balls!
-
Knead each dough dough repeatedly until it becomes a long roll. Use a rolling pin to roll it into a shoe sole. Use a chopstick to make a mark in the middle as shown (it is convenient to tear it apart when pulling noodles)
-
Grease the dough and put it on a plate, wrap it in plastic wrap and put it in the refrigerator. Take two portions of each dough, which is very convenient when eating!
-
Then it’s time to boil the water in the pot. During this process, you can stir-fry the noodles and wait until the water boils. It is recommended not to pull the dough hard when pulling noodles to avoid tearing it. You can first stretch the dough into a long strip (tear it apart at the chopstick mark in the middle) and divide it into two. Be careful not to have lumps on both ends of the dough. According to your personal preference, if you like to eat a wide one, you can only divide it into two strips. If you like to eat a narrow one, divide it into two strips and then into four strips!
-
Pour the cooked noodles into the hot sauce prepared in advance (I made tomato, egg and fungus), then pour in chili oil or vinegar, and a bowl of smooth and delicious braised noodles is ready! ~~~If you like it, please give it a like! 😊
