Homemade fermented beef patties
Overview
The pies we have here are mainly made from yeast dough, and the ones with dead dough are called boxes, such as leek boxes, pork boxes, and so on. There are two types of patties: water-risen dough and dry-risen dough (that is, the dough is very thin and the dough is slightly thick). Today I introduce a beef patty made with dry-risen dough. It is simple and easy to operate and tastes very good!

Take an appropriate amount of flour and add a small amount of angel yeast (approximately 2g for every 250g of flour, if more, the proofing time will be shorter, if less, the proofing time will be longer)

Add a small amount of cold water (120g~150g for every 250g of flour) and stir into snowflakes while adding.

Knead the flour into dough

Cover with plastic wrap and place in a warm place for about 1 hour. (If the temperature is relatively low, the baking time can be appropriately extended)

Make beef stuffing: take a piece of beef

Cut the beef into fine dices (it would be better if you have a blender and blend it directly into minced meat)

Chop the scallion into fine pieces

Mix diced beef and diced green onions, add appropriate amount of salt, Sichuan peppercorns, pepper noodles, light soy sauce, and a small amount of water, mix well

The meat filling is ready and the noodles are ready

Knead the dough repeatedly to release the air from the dough. Put an appropriate amount of oil on the cutting board to prevent sticking, and divide the dough into equal-sized pieces

Take a ball of medicine and stretch it with your hands

Roll the dough into a long thin sheet as shown in the picture

Apply some vegetable oil on the dough, take an appropriate amount of meat filling and place it on one side of the dough

Pay attention to bringing the noodles on both sides closer to the middle at any time to cover the meat filling and prevent the filling from being exposed

Roll the dough into shape as shown in the picture

Pinch both ends together and press in the middle to form a cylinder as shown in the picture

Use a rolling pin to gently roll the dough into a cake

Add a little oil to the pan, add the dough and fry slowly over low heat

Flip and fry for another 1~2 minutes
