Wash the stone crabs and remove some of the water.

Cut in half belly side up.

Cut the ginger, mince the garlic, and pour the cooking wine

Heat the oil 70% and fry with the cut side down. After 2 minutes, add ginger and minced garlic. If minced garlic is fragrant, add cooking wine.

When the color is red, add salt and a little MSG. Then add water until half of the crab is covered, cover with chopped green onion and cook for 4 minutes until the water is almost ready.
