  3. Have all the ingredients ready. Mix 3 tablespoons of dark soy sauce and 4 tablespoons of light soy sauce into 1 bowl. I boil 200 grams of Tieguanyin tea leaves in hot water and put them in a bowl. 10 star anise, 7-8 dried chili peppers, 7 bay leaves, 1 large piece of rock sugar (my rock sugar is polycrystalline rock sugar, 1 large piece is worth 7-8 single crystal rock sugar). If you don’t have rock sugar at home, you can use either white sugar or brown sugar, 2 tablespoons.

  4. Put all the auxiliary ingredients into the pot, then add water, 70% full. Dark soy sauce and light soy sauce may not be salty enough, so it is best to add 2 tablespoons of salt. Mine is a "Tianji" brand electric cooker. If you don't have an electric stew pot at home, you can use a fool-like rice cooker. If you don't have an electric stew pot or a rice cooker, and you're not afraid of wasting gas, you can just use an iron pot or casserole.

  5. Put all the hard-boiled eggs that have been peeled into the pot, cover the pot, plug in and start cooking. I choose the quick stew mode and cook for 1 hour. If you are using a fool-style rice cooker with only two buttons: "cook" and "keep warm", that one is very powerful and only needs to cook for 30 minutes, and it will not automatically cut off the power. Remember to set the alarm and turn off the power after 30 minutes, otherwise it will cook until it burns.
