Wash the king oyster mushrooms and tear them into shreds by hand, not too thin.

Add 2 tablespoons of cornstarch and mix well or use chopsticks. You can add cornstarch little by little, don't add too much.

Put enough oil in the pot, set it to medium-low heat, heat the oil to 60%, add the battered king oyster mushroom shreds, be sure to put them one by one, don't put them all at once, as they will stick together.
