Cut the tofu into long pieces about 2cm thick; *It is too thin to be fried, the soup will not be absorbed, and the taste will be hard

Chop green onions;

Heat oil in a pot, put half of the chopped green onions into the pot and saute until fragrant, then take out the dried chopped green onions, leaving the green onion oil in the pot;

Put in the tofu and fry one side first; *if you are afraid of burning it, you can fry it slowly over medium-low heat. Be sure to fry it thoroughly before flipping it over so it won't break easily. And the texture after cooking is charred on the outside and tender on the inside;

Turn over to the other side and continue frying;

Pour in boiling water to be even with the tofu, add salt, light soy sauce and dark soy sauce cooking wine, bring to a boil over high heat and turn to medium to low heat;

Cover the pot and cook until 1/4 of the soup remains, add sugar and chicken essence, and turn to high heat to reduce the juice! Sprinkle the other half of the chopped green onions to add flavor
