Wash the small eels in water

Put oil in the pot, heat over low heat, add peppercorns

Hold the pot lid in your left hand and the eel basket in your right hand. Quickly pour the eels into the pot and quickly cover the pot lid. When there is no movement in the pot, open the pot lid and turn to medium heat

Add ginger, garlic and red pepper segments and stir-fry for a while, then add the above seasonings (add various sauces according to everyone's taste, different sauces have different tastes, I personally use bean paste and spicy sauce) and stir-fry until all the eels form a circle

Add chicken essence, MSG and salt to taste and serve. Sprinkle with chopped green onion and sesame seeds
