Vanilla Cookies
Overview
Biscuits are a delightful little biscuit that novice bakers must make. With good ingredients and careful production, why do they taste so different from those in the pastry shop? The weather is over 20 degrees, neither hot nor cold, just perfect for making cookies. Come on, make a gift of love to your dear ones.

Ingredients
Steps
-
Weighed butter, icing sugar and caster sugar
-
Use a whisk to beat the ingredients in step 1 at medium speed. Note that the color of the butter becomes lighter and the texture is beautiful, becoming like this feather shape
-
Add an egg yolk, pay attention to the weight of the egg yolk at this time, and continue to stir evenly with a whisk
-
Add the light cream and continue to beat. At this time, note that the weight of the light cream and the weight of the egg yolk are exactly 36 grams, and they must be added in batches. Don't be lazy. Add the egg yolks and whipped cream and the butter will become beautifully feathery.
-
Sift in the weighed low-gluten flour and mix evenly with a whisk and rubber spatula. I usually use both.
-
Place the prepared cookie batter into a pasting bag fitted with a cookie nozzle, and squeeze out a beautiful cookie pattern clockwise. Pay attention to do it clockwise, and then lift your hand slightly away from the baking pan. In addition, this is a gold baking pan, so I don’t cover it with tinfoil or oil paper. When I use an ordinary baking pan, I like to put one or two layers of tinfoil underneath to avoid excessive coloring. I haven't tried it without spreading anything underneath. I feel that the cookies won't stick, but will just be a little overcooked.

Bake in the oven at 200 degrees for 13 minutes, until the surface is golden brown. Regarding the baking temperature and time of cookies, it all depends on whether your oven temperature is accurate. I have two ovens, one with a higher temperature and one with a normal temperature. If I use the higher temperature one, I rotate it to 180 degrees, and the oven is also 200 degrees. If I use the normal one, I rotate it to 200 degrees. If you don't have an oven with hot air circulation, you can turn the baking sheet in the middle so that both sides are evenly colored.

After baking, take it out and place it on a cooling rack to cool down before eating.
