Crystal meat (ice meat)
Overview
When I was a kid, I would make fried rice cakes during the Chinese New Year. Sometimes my mother would add a piece of meat to the stuffing. Years later, I learned that the meat was called ice meat, crystal meat, and other names. Maybe I was really lacking in material resources when I was a kid, so I thought the meat-added pancake was particularly delicious. Now I still eat fried rice pancakes, but I no longer make them myself. I only eat them when they are sold on the street during the Chinese New Year. I still love fried rice pancakes, but it’s a pity that the store that sold fried rice pancakes in previous years didn’t sell them this year, so I didn’t eat them this year. I'm going too far 😊 Now this meat is usually used in moon cakes, chicken cakes, or as stuffing for steamed buns. There are people selling iced meat buns on the street. I don't really like it anymore, but the elderly at home like it.

Thinly slice the fatty pork into small pieces.

Add white wine, sugar and mix well. The amount of white wine is about twice as much as usual for cooking. It depends on the meat. The amount of white sugar should be enough to fully coat the meat. Make sure that every piece of meat is fully coated with sugar.

Place in a covered bowl and refrigerate. At least half a month.

I don’t even remember when I put mine in the refrigerator, but I kept it for a long time. Therefore, the amount of sugar and wine must be sufficient, otherwise it will go bad if left for a long time.
