Potato rub
Overview
Yam Tsa Tsa is a kind of farm rice in Shaanxi. In an era when food was scarce, people in Shaanxi, where potatoes are abundant, used potatoes as a staple food at home. To make this delicacy, you must use a grater (a special tool for making it) to grate the potato into inch-long slices, hence the name potato grater.

Grate the potatoes into inch-long slices with a grater. If you don't have an eraser, you can use a knife to sharpen it.

Wash the processed potato slices two to three times with water and soak them in water for about ten minutes.

Soak in clean water for about ten minutes.

Remove the soaked potato slices and drain them.

Add salt, thirteen spices and pepper to the drained potato slices. Then add the flour a little at a time, stirring thoroughly after each addition.

Stir thoroughly until each potato slice is dispersed independently and there are no lumps sticking together.

Bring the water in the steamer to a boil, put the mixed potatoes into the steamer and steam for 30 minutes.
