Rabbit Assorted Salad
Overview
Rabbit meat is a meat with high protein, low fat and low cholesterol. The protein content of rabbit meat is as high as 70%, which is higher than that of ordinary meat. However, the fat and cholesterol content of rabbit meat are lower than that of all meats, so it is said to be the best meat. It tastes better every year from late autumn to late winter. Today's salad is made with rabbit leg meat, diced carrots, peas, and wolfberries, plus Kewpie corn-flavored salad dressing, which is sweet and salty, adding to the refreshing and sweet taste.

Wash the rabbit legs. I used four rabbit legs. I only used two for this salad. I cooked the other two together for other uses

The spices for cooking meat are ready

Put the rabbit legs into a pot of cold water and add the spices

After boiling over high heat, skim off the foam, turn to low heat, cover and simmer for about 30 minutes. You can easily pierce the thick meat with chopsticks. Turn off the heat, add salt, cover the pan and simmer until cool. This will make the meat tender and not tight, and can absorb part of the salty taste

Wash the dried wolfberry with water and soak it in a small amount of warm water

Blanch peas and let cool naturally

Half a carrot, cut into pea-sized dices

Two cool rabbit legs

After removing the bones, cut the meat into 1cm cubes

Assorted diced rabbit meat, sprinkle with appropriate amount of salt, black pepper, Kewpie corn flavored salad dressing
