Raisin Oatmeal Scones
Overview
The recipe comes from Junzhi's cranberry scone. I only had raisins left, so I made this raisin oatmeal scone. A small snack that is not high in calories. The amount is about 10 pieces.

Steps
-
I soaked the raisins for half an hour. Because I think the raisins are a bit hard when made directly. Depending on your preference, you can skip it. After soaking, chop slightly and cut into two parts, otherwise it will be difficult to knead into the dough.
-
Weigh the flour, salt, and baking powder and mix.
-
Sieve.
-
Add softened butter and sugar and form into coarse cornmeal.
-
I use cooked oatmeal, the kind you can eat with milk for breakfast. You can also use raw oats. You don’t need too much, just 5 grams. You can also leave it alone.
-
Add the above "corn flour" to the whole egg liquid and milk, and knead it into a smooth dough. Then rub in the raisins and oats as well. Don't knead too much to avoid stretching.
-
Roll out the dough to 1.5cm thick. Then it's ready to cut. Any circle or triangle will do.
-
After cutting, brush the surface with a layer of egg wash. Leave some space when placing. Preheat the oven to 200 degrees, middle rack, for 15 minutes.
-
It browns very quickly in the last two minutes of baking. I walked away for a little while and ended up overdoing the coloring.
