  1. Prepare the ingredients listed in Figure 1. Remove the heads and beards of the shrimps, peel the shrimps and leave only the tails. Use toothpicks to remove the two fishy lines on the back and belly of the shrimp, cut the shrimp body one-third away from the head of the shrimp (do not cut it), pass the tail through here, and the body of the shrimp will be ball-shaped. Then use some cooking wine, salt, pepper and diced bits to marinate for 15 to 20 minutes. (I put it in the refrigerator overnight, it’s ok too)

  3. The oil temperature is about 50-60 degrees. Use bamboo chopsticks to stand it up in the oil pan. When there are white bubbles around, add the shrimp. Turn over low heat until it turns yellow. Do not fry for too long. After frying, put it on oil-absorbing paper and filter the oil.
