Wash the chicken legs, cut into thin slices, marinate with oil, salt and corn starch for a while and set aside.

Wash and cut cucumber and carrots into cubes and set aside.

Heat up the pan and add oil. Heat the oil, sauté the ginger until fragrant, add the chicken thighs and fry both sides until cooked. Set aside.

Use the remaining oil to stir-fry the cucumbers and carrots until they are half cooked. Add the fried chicken thighs to the pot and stir-fry until cooked. Add oyster sauce, season with salt and serve.

The chicken thighs are tender and the cucumber and carrots are crispy.
