Put the hairy crabs in a large basin and soak them in water and a spoonful of white vinegar for 2 hours to help spit out the sediment.

Then tie up the legs and feet and brush them clean with a toothbrush.

Mix grated ginger with vinegar, light soy sauce and sugar to make a juice.

Add water to the steamer, add ginger slices and white wine.

In cold water, place the hairy crab on the steamer with its belly facing up.

Put some ginger slices on the belly of the hairy crab to remove the fishy smell and cold.

After the water boils, steam for 12 minutes (my hairy crabs are large, about 400 grams each, so steam them for a while longer).

After steaming, wait two minutes before opening the lid.

Remove and serve with seasoning.

Dip some seasoning into it and eat.
