Overview

Funudo, this classic French dessert is really addictive. Although many friends in Meitian have already made this dessert in their own way, Xixi, I can't help but interpret it again with my own understanding today. The recipe still follows its classic formula. I have seen several recipes before, but I have made some slight improvements. The previous formula generally contained a relatively large amount of sugar, and the ratio of low-gluten flour to sugar was 1:1. After making it, the taste will feel too sweet. Now I use 50 grams of low-gluten flour with only 35 grams of sugar, which is more suitable for the health needs of our modern people. In addition, I slightly reduced the amount of cream and milk to make the texture of the fnuudo more dense and pliable, closer to the characteristics of cake. If the amount of cream and milk is too large, the resulting Funudo will be more like the double-skinned milk we usually eat.

  1. Prepare the ingredients;

  2. Soak blackcurrant raisins and dried apricots in rum for 3 hours in advance;

  3. Add fine sugar to the eggs and beat evenly with a whisk until foamy; (Actually, you can just use a manual one. I wanted the beaten egg liquid to be smoother, so I still used an electric one. Hehe~)

  4. Add the sifted low-gluten flour and salt to the egg liquid that was mixed previously, and continue to mix evenly;

  5. Mix the whipping cream and milk together and stir evenly;

  6. Pour the stirred cream and milk mixture into the egg batter that has been stirred in step 4 above, and continue to stir evenly;

  7. Grease the inside of a baking bowl with softened butter (10g), then evenly spread the soaked and drained dried apricots and raisins in the baking bowl;

  8. Heat the remaining 14 grams of butter over low heat until browned, then pour the butter batter prepared in step 6 into a baking bowl, then use a small spoon to scoop out the clean, impurity-free burnt butter, and pour it evenly over the batter; preheat the oven to 180 degrees and bake on the middle rack for about 50-60 minutes. Watch for the last 10 minutes and bake until the surface is golden brown. (The volume will expand during the process, and will shrink after being baked.)
