Put the pig's trotters in cold water, add some cooking wine, blanch them and wash them. Put it in a pressure cooker, cut a few slices of ginger and add a spoonful of salt. Pour in a small bowl of water and simmer for five minutes.

Open the pressure cooker, add a few spoonfuls of Laoganma according to the spiciness you want, and mix well.

Just simmer for another ten minutes. (I have an electric pressure cooker, and the cooking program is 12 minutes).
