The night before, break the starter into small pieces and soak it in water (tap water is fine, but the amount of water should be small). After soaking for an hour or two, add flour and stir until the flour is no longer dry. (Thick paste) Leave for a few hours! (I usually soak the starter at 17:00, add flour and make a paste at 18:00)

After another two or three hours, add flour and knead the dough! Set aside for later use (I usually knead the dough into a ball at 22:00 before going to bed and let it ferment until the next day)

The dough that has been left overnight has risen.

Add an appropriate amount of baking soda to the fermented dough (edible alkali can also be used to neutralize the fermented acid). If the dough is too sticky, add more flour! Knead until smooth!

Take out the smooth dough, roll it into strips and divide it into equal portions! Knead it into round buns, or cut the buns with a knife.

Remember to leave a small piece of dough, put it in dry flour, or dry it in the sun, seal it, or put it in a dry place as a starter, and continue to use it next time!

Place the kneaded buns in the oven to ferment for 30 minutes (it can be fermented at room temperature or in the sun when the weather is hot)

The fermented steamed buns are more than double the original size!

Apply base oil on the steamer to prevent sticking, put hot water in the pot and steam, turn to medium heat after steaming, steam for 15-20 minutes (depending on the size of the steamed buns), turn to low heat for the last two minutes, don't rush to open the lid after turning off the heat, cover it for a minute or two, otherwise the buns will collapse!
