Purple sweet potato bread (bread machine version)
Overview
Prepare the purple sweet potato in advance, steam and peel it, add an appropriate amount of white sugar or honey (you can also add some salad oil) according to your personal taste while it is hot, put it in a blender and stir until ready to use. You can also knead it yourself with a spoon or your hands.

Put the milk, eggs, sugar, and salt in the bread barrel in order, and put the salt and sugar in the opposite corner. Then put the high-gluten flour, smooth it if not needed, pile it into a hill shape, dig a small hole, put the yeast in it, and cover it up. Put it into the bread machine and knead the dough for 20 minutes, then add camellia seed oil (salad oil) and stir for another 20 minutes

Start the fermentation function, wait until the dough reaches the original 2 cups, take it out, and knead to remove air bubbles. Divide the dough into three parts, stretch it into strips, roll it flat with a rolling pin, add mashed purple sweet potato, fold the dough in half, roll it up, and put it in the bread barrel (I forgot to take pictures of this process)

Sprinkle with sesame seeds to start the second fermentation.

For baking, I chose 30 minutes, and the color was pretty good. I estimate that about 25 minutes would also be fine

Pour out the bread and let it rest. When the bread is cool, break it open with your hands (I don’t have a bread knife) 😭
