Spicy clams
Overview
After buying the clams, soak them in salt water for 2-3 hours, spit out the sand, and prepare all the ingredients, including dried Sichuan peppercorns, onions, ginger, and garlic. Boil the clam shells in water. It should not be cooked for too long, otherwise the meat will fall off. After the shells are boiled, take them out and wash them a few times to control the moisture. Put oil in the pot, add all the ingredients and stir-fry until fragrant, add the clams and stir-fry, add some soy sauce and cooking wine and stir-fry for a few minutes and you are ready to serve
