Crown Bread
Overview
Today is Christmas Eve, and I made a tall bread. This bread has a beautiful shape, looking like a big flower from the top and a crown from the side. It is soft, sweet and rich in flavor.

Except for salt, yeast, butter and accessories, mix all the ingredients and knead until there is no dry powder. Cover with plastic wrap and put it in the refrigerator to refrigerate for one night. Take it out to warm up the next day, add yeast, knead until dissolved, then add salt and knead out a rough film.

Add butter and knead until fully expanded (film emerges).

Leave to ferment in a warm place until doubled in size.

Divide the dough into one portion of about 70 grams, divide the remaining dough into 8 portions, roll into a ball, cover with plastic wrap and rest for 15-20 minutes.

Grease an 8-inch round mold with oil or line it with oiled paper and place a small bowl in the middle.

Roll out 70 grams of dough into a circle with a diameter of 20-30cm, cover it in a small bowl, and leave a portion of the edge for other dough circles to press on.

Flatten the round balls, fill them with purple sweet potato and coconut filling, and place them around the small bowls in turn.

Cut the tureen dough into 8 equal parts.

Peel off the cut dough and place it on top of the balls.

Remove small bowl. If you are worried that the triangular dough sheet will slip off during baking, you can use egg wash to stick it to the small ball.

Leave to ferment in a warm place until doubled in size.

After fermentation, apply egg liquid on the surface and decorate the triangular dough sheet with melon seeds.

If you want to leave a cavity in the middle, you can add a small cylinder (round metal cookie cutter or rolling paper tube, etc.) in the middle before baking.

Preheat the oven to 140 degrees and bake at 130 degrees for 30 minutes. Cover with tin foil when the color is satisfied.

Brush with butter when taken out of the oven, then seal and store while still hot.
