Let’s start: first put in the dried red pepper and fry until fragrant but not black, then put in all the onions, ginger and garlic and stir-fry until fragrant. Note here, if you are afraid of spicy food, you don’t need to add red pepper, or if you like chili pepper, you can add some Sichuan peppercorns, which will definitely taste good. The onion, ginger, and garlic must be fragrant, then put the shrimp in at this time, stir-fry to ensure that the shrimp is hot, then add cooking wine, it is best to hear a "squeak" sound as if the pot is burning, then add salt and sugar. Stir well, then cover the pot and simmer for about a minute. Note, if you like to eat it with soup, you can add a little water and simmer it for a while longer, two or three minutes.
