Peel the potatoes, cut into pieces and soak in water for a while to remove excess starch.

Take out the potatoes and drain

Put oil in the pot and fry the potato cubes

Fry the potato cubes over high heat until golden brown

Drain the fried potato pieces and set aside

In another pot, add a little oil and sauté the star anise until fragrant

Pour in the potato pieces and stir-fry for a few times. Add light soy sauce, dark soy sauce, salt, and sugar. Cover the potato pieces with boiling water. After boiling, turn down the heat.
