Ask the butcher to cut the ribs into sections and take them home to wash them clean. Put 2-3 star anise, three small pieces of cinnamon bark, rice wine, and cold water into the pot. Add the ribs as well, bring to a boil over high heat, take out the ribs, and wash off the foam on the surface with hot water.

Fried sugar: cold pan, cold oil, add a piece of rock sugar (the big one). Fry the rock sugar over low heat.

Add ginger slices and continue to stir-fry over low heat until fragrant.

Add the pork ribs, stir-fry over medium-low heat until browned with sugar, and add half of the salt.

Add cooking wine and dark soy sauce.

Add two small bowls of water and bring to a boil over high heat.

After the fire boils, add two or three small dried chilies and remove as much foam as possible.

Reduce the heat to low and add the other half of the salt when it simmers for twenty minutes.

Simmer on low heat for another ten minutes and then switch to high heat again to collect the juice.

The finished product is out of the pot.
