Steamed shepherd's purse
Overview
There are many similar steamed vegetables in our hometown, from shepherd's purse to bitter greens, alfalfa, cowpeas to eggplants, potatoes, sweet potatoes, chrysanthemum, celery leaves, cabbage, etc. There is nothing that cannot be steamed. I like this method very much, it is low in calories and delicious.

Choose 20 shepherd's purses, wash them and dry them until slightly damp.

Toss the whole shepherd's purse lightly with flour, ensuring that each leaf is coated with a thin layer of flour. Shake off excess flour.

Place another grate on the basket in the steamer and lay a steaming cloth on top. This can ensure that when steaming vegetables, too much water vapor will fall on the basket, causing water to accumulate. After steaming, the leaves of the vegetables will be clear, not hydrated, and will not clump. Arrange the whole shepherd's purse loosely and steam in boiling water for two minutes.
