Sauce-flavored three-cup chicken

Sauce-flavored three-cup chicken

Overview

According to legend, there was a beggar who lived with his mother. One day, my mother was seriously ill and lay in bed for a long time, dying. In order to fulfill his filial piety, the son went out to try to get a hen for his mother to eat. He put the chicken into a broken bowl, asked his neighbor for a glass of rice wine, a handful of salt, and a spoonful of oil and mixed them together. After it was stewed over charcoal fire, he fed it to his mother. Unexpectedly, the aroma was so fragrant that it attracted an official chef next door. He took a piece and tasted it and found it delicious. Later, the official chef continued to improve the cooking method, cooking chicken with a cup of wine, a cup of soy sauce, and a cup of rice wine, and named it Three Cup Chicken. The essence of three cups of chicken is in one cup of oil, one cup of soy sauce and one cup of wine, creating the wonderful taste of this classic delicacy. Some people say that the process of making three-cup chicken is both a pleasure and a torment. Twenty minutes of cooking time and heat must be strictly controlled. One minute more will result in a mushy base, and one minute less will result in juicy and bland taste. But for a foodie, he has to endure the temptation of aroma for twenty minutes but cannot go beyond the torture. Based on the previous experience, we developed this three-cup chicken dish with soy sauce flavor.
