Peel the potatoes and cut them into strips (you can control the exact size, but don’t make it too thin, otherwise it won’t be waxy)

After the potato strips are soaked in water, put them into boiling water and blanch them for about 3 minutes (if you fry them twice in the end, you can blanch them for a while longer. I only fried one side, so I blanch them for a while longer)

Place in the refrigerator for a few hours until the potato strips are firm and ready to use. Of course, you can also freeze it for a few more days and fry it when you want to eat it

Place the potato strips into the hot oil pan. Fry until golden brown (be careful not to splash the oil on yourself)
