Beat the eggs with a little water, salt and sesame oil. Adding water can make the eggs more tender, and adding oil can make the eggs more fragrant.

Cut tomatoes into cubes and set aside

Heat the pot, add a little more oil than usual for cooking

Quickly stir-fry the eggs over high heat and set aside

Heat the pot, add tomatoes, tomato paste, a small amount of sugar, and a small amount of salt. I add sugar and tomato paste because most of the tomatoes are grown in greenhouses, which have no flavor or sweetness. Sugar and ketchup are added for seasoning, because my family loves sweet and sour food.
