Spinach cake

Spring is here, everything is coming back to life, and there are green willows and red flowers everywhere. Spring is a beautiful season, full of vitality everywhere. Even the cake has to bring out the taste of spring. This is a cake with spinach leaves added. It has the color of matcha, but there is no taste of matcha or spinach. It can be said that it is a cake that combines nutrition and color. Spinach stems and leaves are soft, tender, delicious, and rich in vitamin C, carotene, protein, and minerals such as iron, calcium, and phosphorus.

Wash the spinach leaves and blanch them in water.

Put in a food processor and puree the spinach.

Add oil to egg yolk and mix well.

Sift in flour.

Make zigzag shapes and mix into spinach egg yolk paste.

Add lemon juice to egg whites, add caster sugar in three batches, and beat until wet peaks form. Add one-third of the beaten egg whites to the spinach egg yolk batter.

Use a spatula to stir evenly from the bottom up, then pour it back into the remaining egg whites. Do not stir in circles, as this will defoaming.

Mix well using the same technique.

Pour the mixed cake batter into a square baking pan lined with greaseproof paper and knock out any air bubbles. Place in the lower shelf of the oven preheated to 180 degrees and bake for 18 minutes.

Take out the baked cake and let it cool for 3 minutes, then invert it onto the grill and peel off the parchment paper. After all the cakes have cooled, use a round mold to press out 12 cake slices, and use a flower-shaped mold to press out 3 cake slices.

For 9 of the round cake slices, use a large piping tip to press out a round shape in the middle.

Place a complete round cake piece on the bottom, coat it with melted dark chocolate, then place 3 cake pieces with small circles in the middle, and coat each piece with dark chocolate to fix it.

Place the powdered Oreo cookie powder in the middle of the cake slices.

A round shape is also pressed into the center of the flower-shaped cake slice, coated with chocolate, and stuffed again. Insert the straw below to secure.
