Passion Jam Pound Cake
Overview
Passion fruit, also called passion fruit, is a tropical fruit. It is said that it contains the fragrance of a hundred kinds of fruits~~Haha, that may be a bit exaggerated. However, its aroma is really complex! After cutting it open, the first thing I felt was the aroma of mango, then it felt like pineapple, and then it felt like orange? Banana? Apple? Lemon? Therefore, the name passion fruit is worthy of its name! I am an acidophile myself, and I have always felt that fruits with strong sourness, such as lemon and passion fruit, are a perfect match for making pound cake. The aroma and sourness of the fruit can not only neutralize the greasiness caused by a large amount of butter, but also give the cake a unique and rich flavor. Even in this hot weather, you can’t stop eating!

Steps
-
Prepare all the ingredients, defrost butter in advance, mix low-gluten flour with salt, and sift 2 to 3 times in advance. Eggs should also be kept at room temperature;
-
After the butter has softened to the point where you can easily press it with your fingers, add the powdered sugar and mix it with a spatula. After it is basically evenly mixed, use a whisk to beat until the volume expands, becomes white in color, and appears light and feathery;
-
Beat the egg liquid in advance, and then add the egg liquid to the whipped butter in batches. Each time, wait until the previously added egg liquid and butter paste are completely mixed before adding the next time;
-
The final whipped butter and egg paste should have clear traces, enlarged volume, light state, and no separation of oil and water;
-
Preheat the oven to 165 degrees. Add passion fruit jam to the butter and egg batter;
-
Mix well with a spatula
-
Sift in the mixture of flour and salt;
-
Use a spatula to stir evenly and the cake batter is ready. The cake batter at this time should be thick, delicate and shiny, somewhat similar to whipped cream that has been whipped to 5 to 6 parts;
-
Fill the cake batter into the mold. I made a Rabbit's mini pound cake mold, 4 small 4-inch silicone molds;
-
After preheating is completed, put the mold into the oven, middle layer, heat up and down, 160 degrees, and bake for about 25 minutes. Since the two molds are different in size, I baked them for about 10 minutes and then put the silicone mold into the oven;
-
Take some passion fruit jam and add a little warm water to dissolve it to make sugar water for brushing. After baking, take the cake out immediately, unmold it, and brush it with sugar water while it's still hot. The sugar water should be brushed over and over again, trying to brush as much as possible;
-
After it cools completely, seal and refrigerate. It is best to consume it after 2 to 3 days, at least overnight.
