You don’t need to remove the cartilage from the tofu fish, it will taste better if you remove it.

Remove the head and belly of the tofu fish.

Cut off the outer thorns.

Cut into small pieces.

Pour the egg liquid and sweet potato starch together, mix well and set aside.

Fry the fish in oil for a while and add salt.

Add the sweet potato flour and egg liquid, and sprinkle some pepper. If you have some chopped green onions, it’s also a good idea.

Flip and fry until lightly browned, then remove from pan.
