Peel tomatoes and chop into paste

Turn on high heat, add a little water to the pot and bring to a boil

Put fresh spareribs into the pot. You don’t need to blanch the ribs. Add the spareribs and stir-fry over high heat until the water in the pot evaporates and the ribs are oily

Fry the spareribs until oil comes out and changes color slightly, then add sugar and stir-fry

Add sugar and stir-fry until the sugar color becomes slightly caramelized

After the caramel flavor develops, add the chopped tomatoes

Then stir-fry until thickened

Add hot water, enough water at a time, over high heat. After the water boils, add salt, sugar, ginger, and braised juice over medium-low heat. Do not cover the pot while it is boiling

Boil until the water is reduced, pick out the ginger, reduce the juice over high heat, and stir-fry until the pork ribs are slightly oily, then remove from the pan

Remove from pan and plate
