-
Change to high heat, add chopped pork belly pieces and stir-fry.
-
After the meat changes color, continue to stir-fry for a few minutes to fry the fat part to release the oil.
-
Then pour in the dark soy sauce, add salt and sugar, and continue to stir-fry.
-
Mix all the seasonings until the meat is evenly colored.
-
Pour in boiling water (must be boiling water!!! Never cold water).
-
The amount of water should cover the meat and skim off the foam after boiling.
-
Add ginger slices. In this step, you can add a few red dates or kelp and carrots that have been processed in advance.
-
Cover, reduce heat and simmer for 40 minutes. During this period, pay attention to the amount of water in the pot. If it is not enough, add a little boiling water.
-
After 40 minutes, open the lid, reduce the soup over high heat, and coat each piece of meat with a layer of thick and thick soup, then serve on a plate.
