Soak the tofu in water, then cut into pieces and set aside

Boil a pot of water, add a small spoonful of salt to the water, then pour in the chopped tofu, take it out after ten seconds and set aside

Pour oil into a hot pan. When the oil is hot, add an appropriate amount of bean paste (according to your personal preference for spiciness), and then add water to avoid burning the pan

When the chili oil boils, add the enoki mushrooms

Then add tofu and green onions

After boiling, add a spoonful of chicken essence (the author did not add salt because the taste is not strong. If you have a heavy taste, you can add an appropriate amount of salt)

Remove from pan and serve, sprinkle with coriander
