Braised prawns
Overview
When eating out with friends, we always order this braised prawn dish when we consider what our children will eat. Some restaurants call it braised prawns in oil. This is a dish that no child will refuse. The children will always rush to eat it. The more they grab, the more delicious it becomes.

Wash the shrimps, cut off their whiskers, and remove the shrimp gun. Use a toothpick to remove the thread from the back of the shrimp, and use scissors to cut the back of the shrimp from head to tail. Put the shrimp into a bowl and pour in cooking wine to marinate.

Cut the green onions into sections, slice the ginger, and flatten the garlic. Mix the sauce with 2 tablespoons of light soy sauce (30ml), 1/2 teaspoon of black pepper (2g), 1/2 teaspoon of cooking wine (2ml), 2 tablespoons of water (30ml), 1 teaspoon of sugar (5g), and 1/2 teaspoon of starch (2g) to make a braised sauce. Set aside.

Heat oil in a hot pan. After frying both sides of the shrimp until the shrimp oil is beautiful and the shrimp oil is released, take out the shrimp (press the shrimp lightly with a spatula to release more red oil).

Add the onion and ginger to the shrimp oil pan and sauté until fragrant.

Pour in the sauce.

Add the fried prawns, season with a little salt, cover the pot and simmer for 2 minutes.

Then reduce the sauce over medium heat until it becomes slightly thicker. ps. You can leave more juice, the rice with soup is very delicious.
