Prepare the ribs and chop them into pieces.

Prepare the winter melon, peel it and cut into cubes.

Blanch the ribs in a pot and skim off the foam. Add cooking wine to remove the fishy smell while cooking.

Put the blanched ribs into a casserole, pour the broth that has been skimmed off, and add cooking wine and ginger slices.

Bring to a boil over high heat, then reduce to low heat and simmer for 30 minutes. Add the winter melon and simmer over low heat for 15 minutes.
