Choose pork that is three fat and seven lean,

Set aside onion and ginger. Be careful not to use too much. Some people say it tastes like dumplings. This is why

Put the onion, ginger and pork into a food processor and stir into minced meat. You don’t need to mix it too much, just make it into a minced meat. Personally, if it’s too minced, the steamed meat will be white and not meaty, but it must be minced into a puree

Add the egg white and reserve the yolk for later use

Take 1/5 of the amount of water starch from the pork, be careful not to add starch

Pour into the minced pork and spread evenly with your hands

Add a small amount of chicken essence, 2 teaspoons of salt and 1 tablespoon of cooking wine

Place the gauze washed with water on the chopping board (so it won't stick), and use wet hands to spread the meat paste evenly on the gauze

After compressing, wrap it up

Boil water in a steamer over high heat for 25 minutes

After steaming, remove the gauze
