Overview
Western lettuce (also known as ball lettuce, round lettuce), lettuce was introduced from the West, so it is called Western lettuce. Used to boil, the taste is crisp, light and refreshing.

Cut the lettuce lengthwise in the middle, rinse and break into larger pieces.

Thinly slice green onions.

Bring water to a boil in a pot, add 1 tablespoon of salt, a little vegetable oil, and blanch the lettuce for about half a minute, turning it over halfway through.

Take it out and put it on a plate and put some shredded green onion on top.

Pour a little oil into the pot, add shredded green onions and stir-fry.

Add cooking wine, steamed fish soy sauce, oyster sauce, sugar, and balsamic vinegar and bring to a boil.

Pour over the blanched lettuce.
