Rose and Date Jam
Overview
Although fresh dates are good, eating too much will make you feel unwell. I used to go back to my hometown with my mother-in-law, and my sister-in-law in the countryside put potatoes, corn, and peanuts together in a large firewood pot to cook. There was a grate in the pot, and fresh dates and pears were steamed on the grate. They were all harvested from their own fields and yards. Unexpectedly, the steamed fresh dates were very soft and glutinous, sweet, and not irritating to the stomach. I think fresh dates would also be good in jam.

Wash the fresh dates, slice and remove the core.

Remove petals from dried roses and set aside.

Crush the fresh dates and rose petals in a blender.

Pour water into the pot, add the stirred fresh date puree, rose petals, and rock sugar.

After boiling over high heat, reduce to low heat and simmer for about half an hour.

Cook until the water is dry, stirring constantly with a spoon in the middle to avoid burning the pot, and let it cool before eating.
