Sydney Pig Lung Soup

Aim the tracheal opening of the pig's lungs at the faucet and fill it with water. When the pig's lungs are inflated to the point where they can no longer expand, squeeze out the blood and water inside. Repeat this many times until the color of the pig's lungs turns pink or white. I clean it for about an hour.

Soak for another 30 minutes, then use scissors to cut the essence of the pig lungs into small pieces and set aside. Discard other parts.

Cooking wine is about 1 tablespoon.
