Glutinous Rice and Date Cake
Overview
The sweet Xinjiang red dates aroused my appetite for making cold cakes. I started immediately without waiting. The finished product looked a bit like pork belly! Sprinkle sugared osmanthus on it and smell the fragrant osmanthus. Take a bite of jujube paste and it is smooth, rice fragrant and sweet. In the hot summer, enjoy a piece of delicious cold cake. It tastes soft and glutinous, refreshing and pleasant, fragrant but not overpowering, sweet but not greasy, and has endless aftertaste!

Prepare all materials

Boil the jujube paste in advance and set aside

Wash the glutinous rice, add appropriate amount of water, and soak for more than 2 hours. Steam the soaked glutinous rice for about 20 minutes

Steam until cooked

Place the slightly cooled rice in a clean cloth and knead it into a mash

Take a glass container, brush it with a thin layer of oil (you can also cover it with plastic wrap), pour in an appropriate amount of glutinous rice, and flatten it

Spread a layer of jujube paste (I made too much rice, so I made two lunch boxes like this)

Place another layer of glutinous rice on top and press it flat with your hands

Let cool and cut into pieces
