Ingredients
Steps
-
Prepare all cake ingredients
-
Separate the egg yolks and egg whites. The basin should be clean, free of oil and water
-
Add 30 grams of sugar and 2 grams of salt to the egg yolks, beat them with a manual egg beater, then add corn oil in portions, beat well each time and add the next one
-
Add milk and mix well
-
Sift in flour
-
Use a spatula to stir evenly until the batter becomes thick
-
Add a few drops of lemon juice to the egg whites and use an electric whisk to beat until large fish-eye bubbles form. Add the remaining one-third of the sugar and continue beating
-
When small bubbles form, add another third of the sugar and continue beating
-
When the beat becomes slightly textured, add the remaining sugar and continue beating
-
Whisk until the egg whites can pull out two sharp corners
-
Pour one-third of the egg white into the egg yolk
-
To mix the egg batter evenly, you can turn the edge of the bowl with your left hand and use a spatula with your right hand to mix quickly and gently
-
Fold the mixed egg batter into the remaining egg whites
-
Use the same technique as above to stir the egg batter evenly. The mixed egg batter will be smooth and delicate
-
Line the baking sheet with parchment paper in advance
-
Pour the egg batter into the baking pan
-
Use a scraper to repair and smooth
-
Preheat the oven, middle layer, upper and lower heat, 180℃, bake for 23 minutes
-
Take it out, put a piece of oil paper on top, turn it upside down
-
Gently peel off the oil paper on top
-
Then cover it with oil paper, and when it is warm, remove the oil paper and start brushing the jam
-
Brush an even layer of strawberry jam. I applied it on the front side, and it turned out to be curled. (Turn it over again)
-
Gently roll the cake up with oil paper and put it in the refrigerator for half an hour
-
After taking it out, peel off the oil paper and cut into sections
